Chickpea Salad Recipe
Serves 1-2 | Vegan, Gluten-Free
• 2 tsp Moon Balance Mix
• 2 tbsp olive oil
• 1 tbsp fresh lemon juice
• Salt and pepper to taste
• 1 can chickpeas, drained and rinsed
• 1 bell pepper, chopped
• 1 red onion, chopped
• 1 bunch fresh parsley, chopped
• 1/2 cucumber, diced
• 1 cup cherry tomatoes
- Mix the Moon Balance Mix, olive oil, lemon juice, and salt and pepper in a small bowl. Set aside.
- Transfer remaining ingredients to a large bowl and mix well.
- Add the dressing and toss to combine. Enjoy!
