RAW CHOCOLATE CAKE

Still looking for an easy yet delicious christmas dessert recipe? This Raw Chocolate Cake is made with five simple ingredients only, but most definitely qualifies as a great and super yummy treat. When we made this cake it was gone in a heartbeat – next time we'll make sure to double or triple the batch, so they last longer. Try it and you'll know what we mean! Here's the recipe:

RAW CHOCOLATE CAKE

INGREDIENTS:

  • 2 tablespoons Chocolate Lover Mix
  • 2/3 cup cashew nuts
  • 1 big handful of dates
  • 1/4 cup raw walnuts
  • 1/4 cup coconut milk

    DIRECTIONS:

    • Soak the cashews in a bowl of water for at least 30 minutes 
    • Mix the dates (leave some for the filling) and all the walnuts in a blender for the base of the cake.
    • Press the 'dough' in a small cake tin or tupperware and place it in the freezer for about 15 minutes.  
    • Mix the soaked cashews, rest of the dates, coconut milk and Chocolate Lover Mix in the blender.
    • Spread the filling over the base of the cake and put it in the fridge for at least 15 minutes before serving.
    • Cut the cake, share the cake, eat the cake
    • Enjoy!

     SUPER TIP: Melt some dark chocolate and pour it onto the cake before putting it in the fridge for even more chocolatey deliciousness!
