CLEAN GREEN SALAD

SALAD INGREDIENTS:

  • 2 big handfuls of rucola or spinach
  • 1 handful alfalfa sprouts
  • 5 large tomatoes
  • 1 handful of parsley
  • 1 handful of basil
  • 1/2 red onion (cubed)
  • 1/2 (spiralized) cucumber  
  • 1/2 (spiralized) zucchini

DRESSING INGREDIENTS:

  • 1 tablespoon Super Green Mix
  • 1 tablespoon capers
  • 1/2 avocado 
  • 1/3 zucchini 
  • 5 tablespoons water 

    DIRECTIONS:

    • Place all the ingredients for the salad in a bowl and combine.
    • Mix all the ingredients for the dressing in the blender for 30 seconds.
    • Mix everything together.
    • Enjoy!

    SUPER TIP: Add some cooked quinoa or brown rice to your salad to make it more filling!
